These grapes were grown on our steepest and stoniest terroir on a volcanic soil called red Quarzite, it is a very hard material, giving the wine this typical slightly bitter and salty minerality, but also fine aromas of apricots and peaches.
The grapes were picked by hand in the last week of October and fermented in temperature controlled steeltanks.
The vivid freshness in combination with the slight residual sugar of 7 g/l makes this wine perfectly suitable for Asian food and sweet water fish. The wine should be served well chilled.
