Vineyard: Located in the Saar valley, the hilly vineyard site "Wiltinger Schalngengraben" is known for a typical light, fruity and mineral wine style, which is the result of perfect growing conditions in this special terroir. Generally, vines benefit from and excellent and never ending water supply due to many water veins and even small springs at the foot of the hill. In addition to that, the whole slope is entirely south-facing which increases temperature and direct sun radiation throughout the whole growing season. The soil consists of highly decomposed slate those red colour is an indicator for higher amount of iron oxide, lending the wines a distinctive spiciness. Our main parcel was planted in the year of 1905 which makes it one of the oldest vineyards in the whole Mosel region with quite a few vines having survived the enormous phylloxera-crisis in the early 20th century. Other parcels were planted from the 1920ies to 1950ies and are obviously considered old vines as well. Since Nik Weis never clears old vineyards but replaces only sick plates by young ones, there are uncountable numbers of different ages and Riesling clones to be found in the Wiltinger Schlangengraben. One could say that it is a very old and absolutely, multi-generation Riesling vineyard with the best potential to grow fruit-driven and multilayered wines with a remarkable spicy mineralyity.

Wine: Wiltinger Kabinett" is just another prime example for the unmistakable elegant and pure style of the Saar valley. The spicy, floral aromas of Wiltingen's red slate soil match extremely well with the fruity and spicy flavours on the Riesling grape. The delicate but yet unobtrusive residual sweetness is in complete harmony with the refreshing acidity, giving they Kabinett a test structure and depth.
Food pairing recommendations are such as baked potatoes with sour cream, melon wrapped with Serrano or glazed pork belly.

Winery: Founded in 1947, the winery Nik Weis - St.Urbans-Hof had become one of the most important and classic wineries in the Mosel region. Since 2000, the Riesling winery is member of Germany's renowned VDP. From regional-level Estate Rieslings to prestigious Grand Crus, Nik Weis' passion is to express the unique terroir in the wines' taste. Therefor, grapes grow in at least six different, steep sites in both the Mosel and Saar Valley. A traditional, mostly manual cultivation and natural, minimalistic cellar working practise lead to elegant, well-structured and complex wines with high ageing potential.
