Tertiary marl and limestone characterise the soil there. The south-facing vineyards have medium to steep slopes.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThe grapes are harvested by hand according to their ripeness. For optimal extraction of the aromatic substances, the grapes are gently crushed in the winery and left to stand in their own juice for a few hours. After gentle pressing, the juice ferments with wild yeast in stainless steel tanks.
