

Wine: Refreshing and sparkling, with a delicate creamy note and elegant body.
Fermentation: To achieve supple texture and ripeness, 50% of the base wine was matured in large wooden barrels and underwent biological acid decomposition. This was followed by a second fermentation and yeast contact at least 12 months during which they carried out batonage (stirring of the yeast) twice a week for 10 months. This gives the sparking wine a fine perlage.
Vineyard: Rheingau and Riesling, they definitely belong together. There is no other wine growing area in Germany that is dominated as much by one grape variety. Allendorf grow almost 80% Riesling. The cook climate fits perfectly to the characteristics of the grapes variety, and makes it an all-rounder: From first course wines to the top and noble sweet wine to the sparkling wine.
