Wine: This white wine is made of from red grapes - in France this is known as Blanc de Noir - yet it has a bouquet and taste typical of a Pinot Blanc. It has creamy aromas of ripe fruits like apple, pear, peach and melon with fine hints of lemon. It is soft yet has a lively acidity.
Vinification: After being hand picked, the red grapes are gently pressed to avoid colouring of the white juice. Cool fermentation then takes place in stainless steel tanks.
Soil: The vines are grown in soil rich in slate and greywacke decomposition stone.
Drinking recommendation: This wine pairs perfectly with asparagus, fish, fresh salads, seafood and many other starters and light dishes.
