"Salty but fine cream-linen line. The texture is extraordinarity creamy, heavy silk. Real depth and weight, serious intension. It fans out on the finish but with a sensuous swirl rather then flair. Pomelo pith. Richness but intellectual. Hint of borage in this as well and sheathed within the backbone is a cucumber coolness. Wirsching's Silvaners really are unique wines in their own right, punching way above their price points. We'd paying a lot more for this complecity, stature and beauty if there was a word Bourgogne on the label." / Tamlyn Currin @ Jancis Robinson / 17.5 points
The Iphöfer Kronsberg in one of the top Franconian vineyards. It is a pure Keuper site, facing south, but cooler due to the air currents from the eastern forests. The Kronsberg wines are characterised by fine fruit, great harmony and elegance.
Their Keuper soil is a sedimentary rock of clays, interspersed with fine and thicker veins of gypsum. Kueper wines have power and a full body, like the opulent marshy landscape in which the rock was formed. The older the vines, the better this so-called "terroir" can be tasted: subtle fruity notes, a spicy, herbal aroma and a strong, mineral flavour that lingers.
With a 40% share, Silvaner is the most important grape variety there. They focus on Franconian dry Silvaners, i.e. within testable sweetness. With Silvaner, you can feel the soil in which it was grown. That is why it used to be called "earthy". Silvaner is the ideal wine to accompany food, especially where food is prepared as gently and mineral as possible.
Its aroma I multi-layered: the taste of wild herbs, subtle fruity notes of pear and apple together with an enormous density and length give this wine a complex structure. A wine with great sustainability and future.
Food recommendation: Asparagus, fennel, onions, potatoes, vegetable stew, vegetable casserole, light fish cuisine, chicken, veal.
